Guadalajara Restaurant on Main st. in Lake Elsinore is by FAR my favorite place to eat. Everything on the menu is delicious and in very large portions, and at very reasonable prices. The ambiance is relaxing and the service has never been anything but top notch.
And I can't find the words to describe how amazingly perfect their salsa is! The salsa at Guadalajara is one of the items I have on my "food I would take to a desert island to live on" list, and must be experienced at least once in life. I have eaten a lot of salsa over the years, and Guadalajara's salsa is by far the best.
I'm so happy they have reopened!

"LAKE ELSINORE ---- The tortillas are steaming, the asada is sizzling and the margaritas are flowing again at Guadalajara 2 1/2 months after the popular downtown restaurant and landmark shut down because of a fire.
To celebrate the reopening, which occurred without fanfare earlier this month, the Lake Elsinore Valley Chamber of Commerce will hold a ribboncutting at noon Wednesday at the restaurant at 105 N. Main St., a spokeswoman for the restaurant said.
The restaurant closed March 2 after a fire broke out early that morning. Firefighters arrived and contained the blaze to the kitchen. The cause of the fire was electrical, fire officials have said.
While owner Ricardo Solano had estimated the restaurant would be closed about a week, the work took much longer.
Guadalajara has been a fixture at North Main and Graham streets for 22 years, Rosie O'Connor said. A sister restaurant run by the family ---- Guadalajara Grill ---- operates on Jefferson Avenue in Temecula."
